I figured since Easter is mostly about eating a lot of chocolate and cake, why not start off with a healthy Asparagus Parsley Slaw!
It’s a super easily made side dish for your brunch, or as a starter for Easter dinner.
I got the recipe from SAVEUR, one of my favorite sites to find new and delicious recipes or just inspiration for my own. This time I went for the recipe and just switched mint to parsley. I recommend you use whatever you like best, both ways are delicious!
